Recipe - Chocolate Rice Pudding

This recipe is so easy and tasty, you can pop it in the oven and relax. It takes 20 minutes to make and one hour to bake. A comforting dish anytime of the day.

What you will need

Butter for greasing

65g arborio rice

2 tbsp caster sugar or brown cane sugar

I bar of Oyin's dark chocolate [ click on link] I used half of the bar as it is high in cocoa

750 ml coconut milk

Raspberries [ optional ]

Cocoa Powder for dusting [ optional ]

I like the combination of the raspberries with the pudding. The sharpness of the raspberries cuts through the sweetness of the pudding and makes it so delicious.

  1. Preheat the oven to 160 or gas 3. Grease a 1.25 litre shallow baking dish. Put the rice in the dish, sprinkle the sugar on the rice.

2. Put Oyin's dark chocolate , milk in a pan over a low heat, stirring until the chocolate has melted and the milk is hot. Carefully pour the chocolate milk over the rice and stir properly until all the chocolate milk has touched the rice.

3. Put in the oven and bake for one hour until a skin as formed and it is thick enough to coat the back of a spoon. Cool for 5 minutes and dust with cocoa powder. Serve with fresh raspberries or crème fraiche if you like.
